Ingredients

1 cup honey

1 cup granulated sugar

1/2 cup unsalted butter, softened

3 large eggs

1 teaspoon vanilla extract

2 teaspoons baking soda

4 cups all-purpose flour

1/4 teaspoon salt

2 cups heavy cream

1 tablespoon powdered sugar (for whipped cream)

1/2 cup walnuts, finely chopped (optional, for decoration)

Instructions

Prepare the Dough:

    - In a large mixing bowl, combine honey, granulated sugar, and softened butter. Mix until creamy.

      - Add the eggs one at a time, followed by the vanilla extract. Mix until well blended.

        - In a separate bowl, whisk together flour, baking soda, and salt.

          - Gradually add the dry ingredients to the wet mixture, stirring until a smooth dough forms.

            Form and Bake the Layers:

              - Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.

                - Divide the dough into 8 equal portions. Roll each portion into a thin circle (about 1/8 inch thick).

                  - Place the circles on the prepared baking sheets and bake for 5-7 minutes or until light golden brown. Keep an eye on them as they bake quickly.

                    Cool the Layers:

                      - Remove the layers from the oven and let them cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.

                        Prepare the Cream:

                          - In a chilled mixing bowl, whip the heavy cream until soft peaks form. Add the powdered sugar and continue whipping until stiff peaks form.

                            Assemble the Cake:

                              - Place the first baked layer on a serving platter. Spread a generous layer of whipped cream over it.

                                - Continue layering with the remaining circles and whipped cream, ending with a layer of cream on top.

                                  Decorate:

                                    - Garnish the top with finely chopped walnuts (if using). Allow the cake to chill in the fridge for at least 4 hours or preferably overnight to let the flavors meld.

                                      Serve:

                                        - Before serving, dust with a little powdered sugar if desired. Slice and enjoy the layers of delicious honey sweetness!
