12 oz cheese tortellini

4 oz salami, diced

8 oz fresh mozzarella balls, halved

1 cup cherry tomatoes, halved

1 cup baby spinach, roughly chopped

1/2 cup black olives, sliced

1/4 cup red onion, finely diced

1/4 cup fresh basil, chopped

1/3 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon Italian seasoning

Salt and pepper to taste

Parmesan cheese shavings, for garnish

Instructions
 

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until emulsified.

      Assemble the Salad: In a large mixing bowl, combine the cooked tortellini, diced salami, halved mozzarella balls, cherry tomatoes, baby spinach, black olives, red onion, and chopped basil.

        Dress the Salad: Pour the dressing over the salad and toss gently to combine, ensuring that all ingredients are well-coated.

          Chill: Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
