Salmon Skewers with Lime Salsa

For the Salmon Skewers:

1 lb salmon fillet, boneless and skinless

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 lemon, juiced

For the Lime Salsa:

1 medium avocado, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Salt and pepper to taste

Instructions
 

Prepare the Salmon:

    - Cut the salmon fillet into 1-inch cubes and place them in a bowl.

      - In a separate bowl, whisk together olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, pepper, and lemon juice. Pour this marinade over the cubed salmon. Stir gently to ensure all pieces are well coated. Cover and refrigerate for at least 30 minutes.

        Make the Lime Salsa:

          - In a medium-sized mixing bowl, combine diced avocado, halved cherry tomatoes, finely chopped red onion, minced jalapeño, and cilantro.

            - Squeeze fresh lime juice over the mixture and add salt and pepper to taste. Gently toss to combine, being careful not to mash the avocado. Set aside to allow flavors to meld.

              Preheat the Grill:

                - Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

                  Assemble the Skewers:

                    - Thread the marinated salmon cubes onto the skewers, leaving a little space between each piece to promote even cooking.

                      Grill the Skewers:

                        - Place the salmon skewers on the grill and cook for about 2-3 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Avoid overcooking to keep the salmon tender and juicy.

                          Serve:

                            - Once cooked, remove the skewers from the grill. Serve the salmon skewers warm topped with the lime salsa for a refreshing touch. Optionally, garnish with extra cilantro and lime wedges.
