For the Crust:

1 ½ cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

For the Apple Pie Filling:

4 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/2 cup granulated sugar

1 tsp cinnamon

1/4 tsp nutmeg

1 tbsp lemon juice

1 tbsp cornstarch

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup brown sugar

1 tsp vanilla extract

3 large eggs

1/2 cup sour cream

For the Salted Caramel Sauce:

1 cup granulated sugar

6 tbsp unsalted butter

1/2 cup heavy cream

1 tsp sea salt

For Garnish:

Whipped cream

Additional salted caramel sauce

Thin apple slices

Prepare the Crust: Preheat the oven to 350°F (175°C). In a large bowl, mix graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until set. Remove from oven and let cool.

    Make the Apple Pie Filling: In another bowl, toss diced apples with sugar, cinnamon, nutmeg, lemon juice, and cornstarch until evenly coated. Let sit for 10-15 minutes to allow the apples to release some juices.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat cream cheese and brown sugar until smooth and creamy. Add vanilla extract, and mix well. Add eggs one at a time, mixing just until incorporated. Finally, stir in sour cream until fully combined.

        Layer the Cheesecake: Pour half of the cheesecake filling into the cooled crust. Evenly distribute half of the apple pie filling on top. Repeat with the remaining cheesecake and apple fillings, smoothing the top.

          Bake: Bake in the preheated oven for 55-65 minutes. The edges should be set, and the center will still have a slight jiggle. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

            Prepare Salted Caramel Sauce: In a saucepan over medium heat, melt granulated sugar, stirring until it turns amber. Slowly add butter, stirring until blended. Gradually drizzle in heavy cream while stirring. Remove from heat and add sea salt. Let it cool.

              Chill: Once the cheesecake has cooled to room temperature, refrigerate for at least 4 hours, preferably overnight.

                Serve: Remove from the springform pan, drizzle with salted caramel sauce, top with whipped cream, and garnish with apple slices before slicing and serving.
