Ingredients
  

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/4 cup granulated sugar

For the apple filling:

3 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced

2 tablespoons lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 cup brown sugar

1 tablespoon cornstarch

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1/2 cup sour cream

1/2 cup heavy cream

For the salted caramel sauce:

1 cup brown sugar

1/2 cup heavy cream

4 tablespoons unsalted butter

1 teaspoon sea salt

For garnish:

Whipped cream

Extra salted caramel sauce

Thin apple slices

Instructions
 

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.

    Make the apple filling: In a bowl, combine sliced apples with lemon juice, cinnamon, nutmeg, brown sugar, and cornstarch. Mix until apples are well coated. In a skillet over medium heat, cook the apple mixture for about 5-7 minutes, until just tender. Remove from heat and allow to cool.

      Prepare the cheesecake filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar with an electric mixer until smooth. Add vanilla extract and mix well. Add eggs one at a time, mixing on low speed just until combined. Be careful not to overmix. Fold in sour cream and heavy cream until smooth.

        Assemble the cheesecake: Pour half of the cheesecake batter over the crust. Spread half of the cooled apple mixture over the batter. Pour the remaining cheesecake batter on top, then add the rest of the apple filling. Swirl with a knife to create a marbled effect.

          Bake the cheesecake: Bake the cheesecake for about 60-70 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and crack the door slightly, letting the cheesecake cool in the oven for about an hour. This helps prevent cracking.

            Make the salted caramel sauce: In a saucepan over medium heat, combine brown sugar, heavy cream, and butter. Stir constantly until the mixture boils. Continue to boil for 5 minutes without stirring. Remove from heat and stir in sea salt. Let cool slightly.

              Cool and chill: Remove the cheesecake from the oven and let it cool completely at room temperature. Once cool, cover and refrigerate for at least 4 hours, preferably overnight.

                Serve: Before serving, drizzle the chilled cheesecake with salted caramel sauce. Top with whipped cream and apple slices for garnish.
