Sauerkraut Casserole

Ingredients
  

4 cups sauerkraut, drained and rinsed

1 pound ground beef or turkey

1 cup chopped onion

2 cloves garlic, minced

2 cups cooked rice (white or brown)

1 cup shredded cheddar cheese

1 can (15 oz) diced tomatoes, undrained

1 teaspoon caraway seeds (optional)

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, sauté until onions are translucent (about 5 minutes).

      Add the ground beef (or turkey) to the skillet. Cook until browned, breaking it up with a wooden spoon. Drain excess fat if necessary.

        Stir in the cooked rice, diced tomatoes (with their juice), caraway seeds, paprika, salt, and pepper. Mix well and let it simmer for about 5 minutes.

          In a large casserole dish, spread half of the sauerkraut on the bottom. Layer half of the meat mixture on top of the sauerkraut.

            Add the remaining sauerkraut, followed by the rest of the meat mixture. Finally, top with shredded cheddar cheese.

              Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes.

                Remove the foil and bake for an additional 15 minutes, until the cheese is bubbly and golden.

                  Remove from the oven and let it cool slightly before serving. Garnish with fresh parsley if desired.
