1 medium onion, sliced

2 bell peppers (any color), sliced

3 cloves garlic, minced

1 teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional, for extra heat)

2 tablespoons olive oil

1 can (14.5 oz) diced tomatoes, drained

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Crusty bread or rice for serving (optional)

Instructions
 

Prepare the Sausage: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the Italian sausage and cook for about 5-7 minutes, or until browned and cooked through. Break it up into bite-sized pieces as it cooks. Remove the sausage from the skillet and set it aside, leaving any drippings in the pan.

    Sauté the Vegetables: In the same skillet, add the sliced onion and bell peppers. Sauté for about 5-7 minutes until they start to soften and caramelize. Stir in the minced garlic, Italian seasoning, and red pepper flakes (if using), and cook for another minute until fragrant.
