6 large eggs

1/2 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

8 fully cooked breakfast sausage links

1 cup shredded cheddar cheese

4 large flour tortillas (10-inch)

1 tablespoon olive oil (for cooking)

Optional: salsa or hot sauce for serving

Instructions
 

In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Heat a non-stick skillet over medium heat and add the olive oil. Once the oil is hot, add the sausage links and cook for about 2-3 minutes on each side until heated through and slightly crispy. Remove from the skillet and set aside.

      Pour the egg mixture into the skillet, and cook, stirring gently until the eggs are scrambled and cooked to your desired consistency, about 4-5 minutes. Remove from heat and set aside to cool slightly.

        Place a tortilla on a clean surface. Layer with 2 sausage links, a generous scoop of scrambled eggs, and a sprinkle of shredded cheddar cheese.

          Roll the tortilla tightly from one end to the other, tucking in the sides as you go to create a secure roll-up. Repeat with the remaining tortillas and filling.

            Optional: For extra crispness, you can place the roll-ups back in the skillet over medium heat for 2-3 minutes per side, or use a panini press until golden and heated through.

              Slice the roll-ups in half and serve warm with salsa or hot sauce, if desired.
