1 pound breakfast sausage, crumbled

1 (30-ounce) package frozen hashbrowns, thawed

1 cup shredded sharp cheddar cheese

1 cup diced bell peppers (red and green for color)

1 small onion, diced

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Cooking spray or olive oil for greasing

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish with cooking spray or olive oil.

    In a large skillet over medium heat, cook the crumbled sausage until browned and cooked through, breaking it up as it cooks. Drain excess fat if necessary.

      In the same skillet, add the diced onion and bell peppers to the sausage. Sauté for about 3-4 minutes, until they are softened.

        In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

          In the prepared baking dish, spread the thawed hashbrowns evenly across the bottom. Layer the sausage mixture on top of the hashbrowns.

            Pour the egg mixture evenly over the sausage and hashbrowns, ensuring everything is well coated.

              Sprinkle the shredded cheddar cheese on top of the casserole.

                Bake in the preheated oven for 45-55 minutes, or until the eggs are set and the top is golden brown and bubbly.

                  Once done, remove from the oven and let it cool for a few minutes before slicing into squares to serve.
