Sausage Jambalaya

Ingredients
  

1 lb andouille sausage, sliced

1 medium onion, diced

1 green bell pepper, diced

2 celery stalks, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 cup long-grain white rice

4 cups chicken broth

2 tsp Cajun seasoning

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

1 bay leaf

1 cup frozen peas

2 tbsp olive oil

Salt and pepper to taste

Chopped green onions and parsley, for garnish

Instructions
 

Preparation: Heat olive oil in a large pot or Dutch oven over medium heat. Add the sliced andouille sausage and cook until browned, about 5 minutes. Remove the sausage and set aside, leaving the drippings in the pot.

    Sauté Vegetables: In the same pot, add diced onion, green bell pepper, and celery. Sauté for about 5-7 minutes until softened. Add minced garlic and sauté for an additional minute, until fragrant.

      Combine Ingredients: Stir in the diced tomatoes (with juice), rice, chicken broth, Cajun seasoning, smoked paprika, cayenne pepper, and bay leaf. Bring the mixture to a boil.

        Cook Jambalaya: Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

          Add Sausage and Peas: Once the rice is cooked, add the browned sausage and frozen peas. Stir well to combine and cook for another 5 minutes until heated through. Taste and adjust seasoning with salt and pepper, if necessary.

            Serve: Remove the bay leaf and discard. Fluff the jambalaya with a fork and garnish with chopped green onions and parsley before serving.
