Sausage Potato Soup

1 lb (450g) Italian sausage (mild or spicy, based on preference)

4 medium potatoes (about 1.5 lbs), diced (Yukon gold or russets work well)

1 large onion, chopped

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup heavy cream or coconut milk for a lighter version

2 cups kale, chopped (or spinach)

2 teaspoons dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Optional: Grated Parmesan cheese for serving

Cook the sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a wooden spoon as it cooks. Sauté until browned and cooked through, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot.

    Sauté the aromatics: In the same pot, add the chopped onion and cook until it becomes translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add potatoes and broth: Add the diced potatoes, chicken broth, dried thyme, and smoked paprika to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it cook for about 15-20 minutes, or until the potatoes are tender.

        Incorporate cream and greens: Once the potatoes are tender, stir in the heavy cream (or coconut milk) and the kale. Add the reserved sausage back to the pot. Cook for an additional 5-7 minutes until the greens have wilted and everything is heated through.

          Season to taste: Taste the soup and season with salt and pepper as needed. Allow the flavors to meld for a few minutes before serving.
