1 pound Italian sausage (pork or turkey)

1 medium onion, finely chopped

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

6 cups chicken broth

1 can (14 oz) diced tomatoes (with juices)

2 cups fresh spinach (or kale)

1 package (9 oz) fresh cheese tortellini

Salt and pepper to taste

2 tablespoons olive oil

Grated Parmesan cheese for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Sausage: In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon as it cooks. Remove the sausage and set aside, leaving some fat in the pot.

    Sauté Vegetables: In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables begin to soften. Add minced garlic, oregano, basil, and red pepper flakes (if using) and cook for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Return the cooked sausage to the pot. Pour in the chicken broth and diced tomatoes, stirring to combine. Bring the mixture to a boil.

        Cook the Tortellini: Once boiling, add the fresh tortellini to the soup. Reduce the heat to a simmer and cook for about 5-7 minutes or until the tortellini are al dente.

          Add Greens: Stir in the fresh spinach (or kale) and let it wilt for about 2 minutes. Season the soup with salt and pepper to taste.
