6 large eggs

1 cup whole milk

1 cup fresh spinach, chopped

6 slices of bacon, cooked and crumbled

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x9 inch baking dish or a similar-sized oven-safe skillet.

    Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from heat, let cool slightly, and crumble into bite-sized pieces. Leave about 1 tablespoon of rendered fat in the skillet for added flavor.

      Sauté the Spinach: Add olive oil to the skillet with the bacon fat and heat over medium. Add the chopped spinach and sauté for 2-3 minutes until wilted. Remove from heat and let cool slightly.

        Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using). Ensure all ingredients are well combined.

          Combine Ingredients: Add the sautéed spinach and crumbled bacon to the egg mixture. Fold in the shredded cheddar and grated Parmesan cheese until just combined.

            Bake: Pour the egg mixture into the prepared baking dish. Spread it out evenly. Tap the dish lightly on the counter to remove any air bubbles.
