4 large flour tortillas

6 large eggs

½ cup milk

1 cup shredded cheddar cheese

1 cup cooked breakfast sausage, crumbled (or plant-based sausage)

1 medium bell pepper, diced (any color)

½ medium onion, diced

1 ripe avocado, sliced

½ cup salsa (mild or spicy, depending on your preference)

1 tsp garlic powder

1 tsp paprika

Salt and pepper, to taste

Fresh cilantro, chopped (optional, for garnish)

Olive oil or butter for cooking

Instructions
 

Preparation of Ingredients:

    - In a large bowl, whisk together eggs and milk, then season with garlic powder, paprika, salt, and pepper. Set aside.

      - Heat a skillet over medium heat and add a little olive oil or butter.

        Cook the Vegetables:

          - Add diced onion and bell pepper to the skillet. Sauté until they are soft and fragrant, about 4-5 minutes.

            - Remove the sautéed vegetables from the skillet and set aside.

              Scramble the Eggs:

                - In the same skillet, pour the egg mixture and cook, gently stirring, until the eggs are just set and fluffy (about 3-4 minutes).

                  - Stir in the crumbled sausage and cooked vegetables, mixing well until everything is heated through.

                    Assemble the Burritos:

                      - Lay out a tortilla on a flat surface. Place a generous scoop of the egg mixture in the center, sprinkle with shredded cheese, and top with a few slices of avocado and a spoonful of salsa.

                        - Fold in the sides of the tortilla and then roll it up from the bottom to secure the filling. Repeat with the remaining tortillas.

                          Final Touch:

                            - Clean the skillet and add a little more olive oil over medium heat. Place the burritos seam-side down in the skillet and cook until golden and crispy, about 2-3 minutes on each side.

                              - Remove from heat and let them cool slightly before slicing in half.
