8 oz chorizo sausage, casing removed

4 large eggs

1/4 cup milk

1/2 cup diced bell peppers (red, yellow, or green)

1/4 cup diced onions

1 cup shredded cheese (cheddar or pepper jack)

8 small corn or flour tortillas

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Salsa or hot sauce (for serving)

Salt and pepper to taste

1 tbsp olive oil

Instructions
 

Cook the Chorizo: In a large skillet over medium heat, add the chorizo, breaking it apart with a spatula. Cook for about 5-7 minutes, until it’s browned and crispy.

    Add Vegetables: Add the diced bell peppers and onions to the skillet with the chorizo, sautéing until soft, about 3-4 minutes.

      Prepare the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture into the skillet with the chorizo and vegetables. Stir gently to combine.

        Cook the Eggs: Cook the egg mixture, stirring occasionally, until the eggs are just set but still fluffy, about 3-4 minutes. If you like your eggs a little more cooked, you can cook them a bit longer.

          Warm the Tortillas: In a separate pan, heat the tortillas on low for about 30 seconds on each side, or until warm and pliable.

            Assemble the Tacos: Take a warmed tortilla and spoon a generous amount of the chorizo and egg mixture into the center. Top with shredded cheese, avocado slices, and chopped cilantro.

              Serve: Drizzle with your favorite salsa or hot sauce, and serve immediately while hot.
