1 lb baby potatoes, washed and halved

2 tablespoons olive oil

Salt and pepper to taste

4 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

1 teaspoon dried Italian herbs (optional)

A squeeze of fresh lemon juice

Preheat your oven to 400°F (200°C).

    Toss the potatoes: In a large mixing bowl, combine the halved baby potatoes, olive oil, salt, and pepper until evenly coated.

      Roast the potatoes: Spread the potatoes out on a baking sheet in a single layer and roast in the preheated oven for about 25-30 minutes or until golden brown and tender, flipping once halfway through.

        Prepare the garlic sauce: While the potatoes are roasting, heat a small skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.
