2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 tablespoon granulated sugar

1/2 cup unsalted butter, cold and cubed

3/4 cup buttermilk, chilled

1 tablespoon fresh chives, finely chopped (optional)

1 cup shredded cheddar cheese (optional)

Additional flour for dusting

Instructions
 

Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, press the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter still visible.

        If you're using them, stir in the chopped chives and shredded cheddar cheese.

          Make a well in the center of the dry mixture and pour in the chilled buttermilk. Stir gently with a fork until just combined. Do not overmix; the dough should be a bit shaggy.

            Turn the dough out onto a lightly floured surface. Gently knead it 4-5 times, just until it comes together. Pat the dough into a rectangle about 1 inch thick.

              Using a sharp knife or a biscuit cutter, cut the dough into rounds or squares. Be careful not to twist the cutter, as this can seal the edges and prevent the biscuits from rising properly.

                Place the biscuits on the prepared baking sheet, leaving a bit of space between each one. For a golden finish, you can brush the tops with a bit of melted butter or buttermilk.

                  Bake in the preheated oven for 10-12 minutes, or until the tops are golden brown and the biscuits have risen beautifully.

                    Remove from the oven and let cool on a wire rack for a few minutes before serving warm.
