Savory Garlic Shrimp Fried Rice

1 lb large shrimp, peeled and deveined

2 cups cooked jasmine rice (preferably day-old)

4 cloves garlic, minced

1 small onion, diced

1 cup frozen peas and carrots mix

2 large eggs, lightly beaten

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil

2 green onions, sliced (for garnish)

Salt and pepper to taste

Optional: red pepper flakes for heat

Prepare the Shrimp: In a bowl, season the shrimp with salt, pepper, and a sprinkle of red pepper flakes (if using). Let it marinate for about 10 minutes while you prepare the other ingredients.

    Heat the Pan: In a large wok or skillet, heat the vegetable oil over medium-high heat. Once the oil is shimmering, add the shrimp. Cook for about 2-3 minutes, until pink and opaque. Remove the shrimp from the pan and set aside.

      Sauté Aromatics: In the same pan, add a bit more oil if needed. Add the diced onion and sauté for 2-3 minutes until translucent. Then, add the minced garlic and cook for another 30 seconds until fragrant.

        Scramble the Eggs: Push the onions and garlic to the side of the pan, and pour in the beaten eggs. Scramble the eggs until fully cooked, then mix them with the garlic and onions.

          Add Vegetables: Incorporate the frozen peas and carrots into the pan, stirring well to combine. Cook for about 2-3 minutes until the vegetables are heated through.

            Stir in Rice: Add the day-old jasmine rice to the pan, breaking up any clumps. Drizzle the soy sauce, oyster sauce, and sesame oil over the rice. Toss everything together until the rice is evenly colored and heated through.

              Combine Shrimp: Add the cooked shrimp back into the fried rice mixture. Stir well to combine and heat everything through. Taste and adjust seasoning with more soy sauce, salt, or pepper as necessary.
