8 lamb chops, about 1-inch thick

2 tablespoons fresh rosemary, finely chopped

3 tablespoons honey

4 cloves garlic, minced

3 tablespoons olive oil

2 tablespoons balsamic vinegar

Salt and pepper, to taste

Lemon wedges, for serving

Marinate the Lamb Chops: In a bowl, combine the olive oil, honey, balsamic vinegar, minced garlic, and chopped rosemary. Mix well and season with salt and pepper to taste.

    Prepare the Chops: Place the lamb chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the chops, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for maximum flavor.

      Preheat the Grill/Pan: When you’re ready to cook, preheat your grill or a large skillet over medium-high heat.

        Cook the Lamb Chops: Remove the lamb chops from the marinade, shaking off the excess, and place them onto the grill or skillet. Cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness. The internal temperature should reach 145°F (63°C).

          Rest and Serve: Once cooked, remove the lamb chops from the heat and let them rest for 5 minutes. Serve with lemon wedges for an added zest, and drizzle any leftover marinade on top for extra flavor.
