Ingredients

1 pound pork sausage (breakfast or Italian)

8 large buttermilk biscuits (can use store-bought or homemade)

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red and green for color)

1/2 cup chopped onions

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

1/4 teaspoon red pepper flakes (optional for a kick)

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Sausage: In a large skillet over medium heat, crumble and cook the pork sausage until browned and cooked through. Drain any excess fat and remove from heat.

Sauté the Vegetables: In the same skillet, add diced bell peppers and chopped onions. Sauté for about 3-4 minutes until they are softened.

Prepare Biscuit Base: If using store-bought biscuits, cut each biscuit into quarters. If using homemade, slice them in a similar manner. Spread the biscuit pieces evenly in a greased 9x13 inch baking dish.

Layer the Ingredients: Over the biscuit pieces, add the cooked sausage and sautéed vegetables, then sprinkle the shredded cheddar cheese evenly over the top.

Mix the Egg Mixture: In a medium bowl, whisk together the eggs and milk. Add the garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using) to the egg mixture. Stir well to combine.

Pour the Egg Mixture: Carefully pour the egg mixture evenly over the layers in the baking dish, making sure all biscuits and fillings are coated.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the casserole is set and the top is golden brown.

Garnish & Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired. Slice and serve warm.
