1 cup fresh spinach, chopped

1 cup crumbled feta cheese

1 cup all-purpose flour

1/2 cup whole wheat flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup milk (dairy or non-dairy)

2 large eggs

1/4 cup olive oil

1 teaspoon dried oregano

1/2 teaspoon garlic powder

Optional: Fresh herbs (e.g., dill or parsley) for garnish

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Grease a standard muffin tin or line it with paper liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, black pepper, dried oregano, and garlic powder until well combined.

      Prepare the Wet Ingredients: In another bowl, whisk together the eggs, milk, and olive oil until they are incorporated.

        Combine Ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture until just combined. Do not overmix!

          Add Spinach and Feta: Carefully fold in the chopped spinach and crumbled feta cheese until evenly distributed throughout the batter.

            Scoop into Muffin Tin: Using a large spoon or an ice cream scoop, divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                Cool and Remove: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
