Savory Steak Gorgonzola Alfredo with Creamy Parmesan Sauce

2 (8 oz) ribeye steaks, seasoned with salt and pepper

8 oz fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup crumbled Gorgonzola cheese

1/4 cup unsalted butter

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon black pepper (adjust to taste)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Prepare the Steaks: In a large skillet, heat 1 tablespoon of butter over medium-high heat. Add the seasoned ribeye steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest for a few minutes before slicing thinly.

      Make the Alfredo Sauce: In the same skillet, lower the heat to medium and add the remaining butter. When melted, add the minced garlic and sauté for about 1 minute until fragrant.

        Add Cream and Cheese: Slowly pour in the heavy cream and bring to a simmer. Whisk in the grated Parmesan cheese until melted and creamy. Stir in the crumbled Gorgonzola cheese, Italian seasoning, and black pepper. Allow the sauce to thicken for 3-4 minutes, adding reserved pasta water a little at a time to reach your desired sauce consistency.

          Combine Pasta and Sauce: Add the cooked fettuccine pasta to the skillet and toss until well coated with the Alfredo sauce. Adjust seasoning as needed.
