2 salmon fillets (6 oz each)

1 cup lump crab meat, picked for shells

1/2 cup shrimp, peeled and deveined, chopped

1/4 cup cream cheese, softened

1/4 cup breadcrumbs

1/4 cup green onions, finely chopped

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 tablespoon lemon juice

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Stuffing: In a medium bowl, combine the crab meat, chopped shrimp, cream cheese, breadcrumbs, green onions, Dijon mustard, garlic powder, and lemon juice. Mix until just combined. Season with salt and pepper to taste.

      Prep the Salmon: Using a sharp knife, create a pocket in each salmon fillet by slicing horizontally from the thickest part towards the tail, making sure not to cut all the way through.

        Stuff the Salmon: Generously stuff each salmon fillet with the seafood stuffing, ensuring it is evenly distributed.

          Sear the Salmon: Heat olive oil in an oven-safe skillet over medium-high heat. Carefully place the stuffed salmon fillets in the skillet, cooking for about 3-4 minutes on each side, or until golden brown.

            Bake the Salmon: Once seared, transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the salmon flakes easily with a fork and the temperature reaches 145°F (63°C).

              Serve: Remove from the oven, let it rest for a minute, then garnish with fresh parsley and serve with lemon wedges on the side.
