Ingredients
  

8 large eggs

2 cups breakfast sausage, crumbled (pork, turkey, or plant-based)

1 cup bell peppers, diced (mix of red and green)

1/2 cup onion, diced

1 cup baby spinach, roughly chopped

1 cup cherry tomatoes, halved

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

1/2 cup shredded cheddar cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.

    In a skillet over medium heat, cook the crumbled sausage until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

      In a large mixing bowl, whisk together the eggs, garlic powder, paprika, salt, and pepper until well combined and fluffy.

        Spread the cooked sausage evenly on the prepared baking sheet. Add diced bell peppers, onions, cherry tomatoes, and spinach on top of the sausage.

          Pour the whisked egg mixture evenly over the sausage and vegetables. Gently shake the baking sheet to ensure even distribution.

            If using, sprinkle the shredded cheddar cheese over the top.

              Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the eggs are set and slightly golden around the edges.

                Once cooked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before slicing into squares.

                  Serve warm and enjoy your hearty breakfast!
