Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 lemons

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1 pound asparagus, trimmed

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Marinade: In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, dried oregano, smoked paprika, salt, and pepper until well combined.

Marinate Salmon: Place the salmon fillets in a shallow dish. Pour half of the marinade over the salmon, making sure each fillet is well coated. Let it marinate for about 15 minutes.

Prepare Vegetables: On a large sheet pan, arrange the asparagus and cherry tomatoes. Drizzle them with the remaining marinade, and sprinkle with salt and pepper to taste. Toss to coat the veggies evenly.

Arrange on Pan: Create space in the center of the sheet pan and place the marinated salmon fillets skin-side down.

Bake: Transfer the sheet pan to the oven and bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork, and the veggies are tender.

Garnish: Once baked, remove the sheet pan from the oven and garnish with fresh parsley and additional lemon wedges for serving.

Serve: Enjoy your zesty lemon garlic salmon straight from the pan, alongside the roasted asparagus and cherry tomatoes.
