Ingredients
  

4 salmon fillets (about 6 oz each)

1 lb asparagus, trimmed

1 pint cherry tomatoes, halved

1 red bell pepper, sliced

1 yellow onion, sliced

4 cloves garlic, minced

1 lemon, zested and juiced

3 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the marinade: In a small bowl, mix together the minced garlic, lemon juice, lemon zest, olive oil, dried oregano, salt, and black pepper.

      Marinate the salmon: Place the salmon fillets in a shallow dish or a zip-top bag. Pour half of the marinade over the salmon, making sure it's well coated. Let it marinate for at least 15 minutes while you prepare the vegetables.

        Prepare the vegetables: In a large mixing bowl, combine the asparagus, cherry tomatoes, red bell pepper, and yellow onion. Drizzle with the remaining marinade and toss until all the vegetables are well coated.

          Arrange on the baking sheet: Spread the marinated vegetables onto one side of the prepared baking sheet. Use a spatula to make space for the salmon fillets on the other side of the sheet. Place the salmon, skin side down, on the empty side.

            Roast in the oven: Bake the salmon and veggies in the preheated oven for about 15-20 minutes, or until the salmon is cooked through (internal temperature should reach 145°F or 63°C) and the vegetables are tender.

              Garnish and serve: Remove the sheet pan from the oven and let it rest for a couple of minutes. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
