1 pound (450g) Italian sausage (mild or spicy, your choice)

2 cups broccoli florets

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 medium red onion, cut into wedges

2 cups baby potatoes, halved

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon paprika

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Preheat Your Oven: Preheat the oven to 425°F (220°C).

    Prepare the Sausage: In a large mixing bowl, slice the Italian sausages into 1-inch pieces. This allows them to cook evenly and infuse their flavor into the veggies.

      Combine Veggies: Add the broccoli, red and yellow bell peppers, red onion, and baby potatoes to the bowl with the sausage.

        Season Everything: Drizzle the olive oil over the sausage and vegetable mixture, then add the minced garlic, oregano, paprika, red pepper flakes (if using), salt, and pepper. Toss everything together until all ingredients are well-coated with the oil and seasonings.

          Prepare for the Oven: Spread the sausage and veggie mixture evenly on a large sheet pan. Ensure that the pieces are in a single layer to allow for even roasting.

            Roast: Place the sheet pan in the preheated oven and roast for 25-30 minutes, stirring halfway through, until the sausages are browned and the vegetables are tender.
