1 pre-made pie crust (9-inch)

1 cup all-purpose flour

1 cup brown sugar, packed

1/2 cup granulated sugar

1 teaspoon baking soda

1/4 teaspoon salt

1 cup boiling water

1/2 cup unsulfured molasses

1 large egg

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup unsalted butter, melted

Instructions
 

Prepare the Crust: Preheat your oven to 350°F (175°C). Place the pre-made pie crust in a 9-inch pie dish and set aside.

    Create the Crumb Topping: In a medium bowl, mix together 1 cup of flour, 1/2 cup brown sugar, and 1/4 teaspoon salt. Reserve 1/2 cup of this mixture for the topping. To the remaining flour mixture, add 1/4 cup melted butter and mix until crumbly. Set aside.

      Make the Molasses Filling: In a large bowl, combine the boiling water with the baking soda and mix well. Stir in the molasses, granulated sugar, egg, vanilla extract, and the remaining spices (cinnamon and nutmeg) until fully combined.

        Assemble the Pie: Pour the molasses mixture into the crust and then sprinkle the reserved crumb topping evenly over the filling. Drizzle the remaining melted butter over the crumb topping.

          Bake: Place the pie on the middle rack of the preheated oven and bake for 40-45 minutes, or until the filling is set and the top is golden brown. A toothpick inserted into the filling should come out clean.

            Cool & Serve: Allow the pie to cool at room temperature for at least 30 minutes before slicing. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
