12 oz penne pasta

1 lb large shrimp, peeled and deveined

4 tablespoons butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup chicken broth

1 cup heavy cream

1 lemon, juiced and zested

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Lemon wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta until al dente, according to package instructions. Drain and set aside.

      Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and red pepper flakes, and sauté until fragrant, about 1 minute. Add the shrimp, season with salt and pepper, and cook until they turn pink and opaque, about 3-4 minutes. Remove from heat and set aside.

        Make the Sauce: In the same skillet, add the remaining 2 tablespoons of butter and the chicken broth. Bring to a simmer, then stir in the heavy cream, lemon juice, and lemon zest. Simmer for about 3-5 minutes until slightly thickened. Stir in half of the Parmesan cheese, cherry tomatoes, cooked shrimp, and the drained pasta. Mix well to coat.

          Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish. Sprinkle the top with the remaining Parmesan cheese and the mozzarella cheese.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven, let it cool for a few minutes, then garnish with fresh parsley. Serve with lemon wedges on the side.
