8 oz (227g) high-quality dark chocolate (70% cocoa or higher), chopped

1 cup (240ml) heavy whipping cream

3 large egg whites

1/4 cup (50g) granulated sugar

1 tsp vanilla extract

1 tbsp espresso powder

Pinch of salt

Dark chocolate shavings or cocoa powder (for garnish)

Whipped cream (for garnish, optional)

Instructions
 

Melt the Chocolate: In a heatproof bowl, combine the chopped dark chocolate and espresso powder. Place the bowl over a pot of simmering water (double boiler method). Stir occasionally until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly.

    Whip the Cream: In a separate large bowl, beat the heavy whipping cream using an electric mixer on medium-high speed until soft peaks form. Be careful not to overwhip. Gently fold in the vanilla extract. Set aside.

      Whip Egg Whites: In another clean, dry bowl, whip the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar while continuing to whip until stiff peaks form.

        Combine Mixtures: Gently fold the melted chocolate mixture into the whipped cream until just combined. Next, carefully fold in the whipped egg whites in three additions, being mindful not to deflate the mixture. The mousse should be light and airy.

          Chill the Mousse: Spoon the mousse into individual serving cups or ramekins, filling them about three-quarters full. Cover each cup with plastic wrap and refrigerate for at least 2 hours or until set.

            Garnish and Serve: Before serving, optionally top the mousse with whipped cream and decorate with dark chocolate shavings or a light dusting of cocoa powder. Enjoy your silky dessert!
