1 cup all-purpose flour

2 large eggs

1 ½ cups milk

2 tablespoons melted butter

1 tablespoon sugar

½ teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

2 tablespoons powdered sugar (for garnish)

Whipped cream (optional, for serving)

Maple syrup (optional, for serving)

Instructions
 

Make the Batter: In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, and vanilla extract until smooth. Let the batter rest for about 30 minutes at room temperature. This allows the flour to hydrate and results in tender crepes.

    Prepare the Strawberries: While the batter rests, slice the fresh strawberries and set aside. You can also sprinkle them with a bit of sugar to enhance their sweetness, if desired.

      Cook the Crepes: Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the surface with a little butter. Pour about ¼ cup of the batter into the pan, swirling it around to form a thin, even layer. Cook for about 1-2 minutes, until the edges start to lift and the bottom is lightly browned.

        Flip the Crepe: Carefully flip the crepe using a spatula and cook for another 1 minute on the other side. Remove the crepe from the pan and place it on a plate. Repeat the process with the remaining batter, stacking the crepes on top of each other.

          Assemble the Crepes: Take a crepe, add a few slices of strawberries in the center, and fold the crepe over the filling. You can either fold it into quarters or roll it up.
