1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper to taste

1 tablespoon olive oil

1 tablespoon soy sauce (optional for an umami kick)

Fresh parsley, chopped (for garnish)

Prepare the steak: Pat the sirloin steak cubes dry with paper towels and season generously with salt and pepper on all sides.

    Heat the pan: In a large skillet, heat the olive oil over medium-high heat until hot but not smoking.

      Cook the steak bites: Add the seasoned steak cubes in batches to avoid overcrowding the pan. Sear them for about 2-3 minutes on each side until browned and cooked to your desired doneness (medium-rare is around 130°F/54°C).

        Make the garlic butter: Once all the steak bites are cooked, remove them from the skillet and set aside. In the same skillet, reduce the heat to medium-low and add the butter. Let it melt, then add the minced garlic, thyme, and rosemary. Sauté for about 1-2 minutes until the garlic is fragrant but not burnt.

          Combine: Return the steak bites to the skillet and drizzle with soy sauce if using. Toss to coat the steak bites in the garlic butter and herbs, cooking for an additional minute to combine all the flavors together.
