2 lbs beef stew meat, cut into bite-sized pieces

1 cup onions, finely chopped

4 cloves garlic, minced

8 oz mushrooms, sliced

1 cup beef broth

1 cup sour cream

1 tbsp Worcestershire sauce

2 tbsp soy sauce

1 tsp Dijon mustard

1 tsp salt

1/2 tsp black pepper

1 tsp dried thyme

1/2 tsp paprika

2 tbsp olive oil

4 cups egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: In a skillet, heat olive oil over medium-high heat. Add the beef stew meat in batches and sear until browned on all sides, about 5-7 minutes. Remove from skillet and place in the slow cooker.

    Sauté the Vegetables: In the same skillet, add chopped onions and cook until translucent, about 3 minutes. Add garlic and mushrooms, cooking until mushrooms are softened, about another 3-4 minutes. Transfer the mixture to the slow cooker.

      Prepare the Sauce: In a bowl, whisk together beef broth, Worcestershire sauce, soy sauce, Dijon mustard, salt, pepper, thyme, and paprika. Pour the sauce over the beef and mushrooms in the slow cooker. Stir everything together gently to combine.

        Cook: Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.

          Add the Creaminess: About 30 minutes before serving, stir in the sour cream until well mixed. If the sauce is too thick, feel free to add a bit of water or more beef broth until desired consistency.

            Cook the Noodles: Prepare the egg noodles according to package instructions during the last 20 minutes of cooking the stroganoff.

              Serve: Serve the beef stroganoff over a bed of egg noodles. Garnish with fresh parsley for a pop of color and added flavor.
