Slow Cooker Beef & Vegetable Stew

2 lbs beef chuck roast, cut into 1-inch cubes

4 cups beef broth (low sodium)

3 medium carrots, sliced

2 medium potatoes, diced

1 medium onion, chopped

2 cloves garlic, minced

1 cup green beans, trimmed and cut into 1-inch pieces

2 tablespoons tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Prep the Beef: Season the beef chunks generously with salt and pepper. Heat the olive oil in a skillet over medium-high heat. Once hot, sear the beef in batches until browned on all sides. This should take about 5-7 minutes per batch. Transfer browned beef to the slow cooker.

    Sauté the Aromatics: In the same skillet, add the chopped onion and garlic. Sauté until the onions are translucent (about 3-4 minutes), then add the tomato paste and stir to combine, cooking for an additional minute.

      Combine Ingredients: Pour the sautéed mixture over the beef in the slow cooker. Add in the carrots, potatoes, green beans, Worcestershire sauce, thyme, rosemary, paprika, and the bay leaf.

        Add Broth: Pour the beef broth over all ingredients in the slow cooker, making sure everything is submerged. Give it a gentle stir to combine.

          Cook: Cover and cook on low for 8 hours or on high for 4 hours until the beef is tender and the vegetables are cooked through.

            Adjust Seasoning: About 30 minutes before serving, taste the stew and adjust seasoning with additional salt, pepper, or Worcestershire sauce as desired.

              Serve: Remove the bay leaf before serving. Ladle the stew into bowls and garnish with fresh parsley. Serve crusty bread on the side for dipping, if desired. Enjoy your hearty meal!
