2 pounds boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, sliced

1 green bell pepper, sliced

1 red bell pepper, sliced

4 cloves garlic, minced

1 cup chicken broth

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

Salt and pepper to taste

8 slices provolone cheese

8 hoagie rolls

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken breasts with salt and pepper. Heat the olive oil in a skillet over medium heat. Sear the chicken breasts for 3-4 minutes on each side, just until browned, then transfer them to the slow cooker.

    Sauté the Veggies: In the same skillet, add the sliced onions, green bell pepper, red bell pepper, and minced garlic. Sauté for 5-7 minutes until they are softened. Transfer the sautéed veggies to the slow cooker with the chicken.

      Add Broth and Seasoning: Pour the chicken broth and Worcestershire sauce over the chicken and vegetables. Sprinkle with Italian seasoning and give everything a gentle stir to combine.

        Cook in the Slow Cooker: Cover and cook on low for 6-7 hours or high for 3-4 hours, or until the chicken is tender and easily shreds with a fork.

          Shred the Chicken: Once cooked, shred the chicken directly in the slow cooker using two forks, mixing it with the vegetables and broth to absorb the flavors.

            Assemble the Sandwiches: Preheat your oven to broil. Slice the hoagie rolls in half and place them on a baking sheet. Scoop a generous portion of the chicken and vegetable mixture onto each roll, and top with a slice of provolone cheese.

              Melt the Cheese: Broil the sandwiches in the oven for 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning!
