Slow Cooker Chicken Stew

2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

4 medium carrots, sliced

3 medium potatoes, diced (Russet or Yukon Gold)

1 cup celery, chopped

1 large onion, chopped

3 cloves garlic, minced

4 cups chicken broth

1 cup frozen peas

2 tsp dried thyme

1 tsp dried rosemary

1 tsp paprika

Salt and pepper to taste

2 tbsp olive oil

1 tbsp Worcestershire sauce

2 bay leaves

Fresh parsley for garnish

Instructions
 

Sear the Chicken (Optional): In a skillet, heat olive oil over medium-high heat. Season the chicken pieces with salt and pepper, then sear them until browned on all sides (about 5 minutes). This step adds depth of flavor but can be skipped for a quicker prep.

    Add to Slow Cooker: Transfer the seared chicken into the slow cooker along with the sliced carrots, diced potatoes, chopped celery, chopped onion, and minced garlic.

      Pour in Broth: Add the chicken broth, frozen peas, Worcestershire sauce, thyme, rosemary, paprika, bay leaves, and additional salt and pepper. Stir gently to combine all ingredients.

        Cook: Cover and cook on high for 4 hours or low for 6-8 hours, until the chicken is tender and vegetables are cooked through.

          Finish and Serve: Remove the bay leaves before serving. Taste and adjust seasoning if necessary. Garnish with fresh parsley. Serve warm with crusty bread or over rice for a complete meal.
