Ingredients
  

1 pound boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 can (15 oz) tomato sauce

1 packet taco seasoning

1 cup chicken broth

1 medium onion, diced

1 bell pepper, diced (any color)

2 cloves garlic, minced

1 teaspoon ground cumin

1 tablespoon olive oil

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, diced avocado, cilantro, tortilla chips

Instructions
 

In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, sautéing for about 5 minutes until softened. Add minced garlic and cook for an additional 1 minute.

    Transfer the sautéed vegetables to the slow cooker. Add the black beans, corn, diced tomatoes, tomato sauce, chicken broth, taco seasoning, ground cumin, and a pinch of salt and pepper.

      Nestle the chicken breasts into the mixture, ensuring they are covered by the soup ingredients.

        Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is tender and easily shredded.

          Once cooked, remove the chicken breasts, shred them using two forks, and return them to the soup. Stir well to combine.

            Taste and adjust seasoning as needed. Serve hot, garnished with your choice of toppings like shredded cheese, sour cream, diced avocado, cilantro, or crushed tortilla chips.
