2 lbs boneless, skinless chicken thighs

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 jar (16 oz) salsa (your choice of spiciness)

1 packet taco seasoning

1 medium red onion, chopped

3 cloves garlic, minced

1 bell pepper (red or green), chopped

Juice of 1 lime

Salt and pepper to taste

Small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Finely sliced avocado (for garnish)

Crumbled feta or shredded cheese (optional, for topping)

Instructions
 

Begin by placing the boneless, skinless chicken thighs at the bottom of your slow cooker. These will serve as the tender base of your tacos.

    In a separate bowl, mix together the black beans, corn, salsa, taco seasoning, chopped onion, minced garlic, and chopped bell pepper.

      Carefully spoon the mixture over the chicken in the slow cooker, ensuring the chicken is well coated.

        Squeeze the lime juice over the entire mixture and season with salt and pepper to taste.

          Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, depending on your schedule. Cook until the chicken is cooked through and tender enough to shred easily with a fork.

            Once cooked, shred the chicken directly in the slow cooker with two forks, mixing it well with the beans and corn.

              Warm the tortillas in a skillet or microwave, and prepare your toppings such as cilantro, avocado, and cheese.

                Serve the chicken mixture on tortillas, topped with fresh cilantro, sliced avocado, and cheese if desired.
