Slow Cooker Chili

1 lb ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14 oz) diced tomatoes (with juices)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (6 oz) tomato paste

2 cups beef or vegetable broth

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1-2 chipotle peppers in adobo sauce (minced, adjust based on spice preference)

Salt and pepper to taste

1 tsp oregano (dried)

Optional toppings: sour cream, shredded cheese, chopped green onions, fresh cilantro

Instructions
 

Brown the Meat: In a skillet over medium-high heat, cook the ground beef or turkey until browned. Drain excess fat and transfer to the slow cooker.

    Sauté Aromatics: In the same skillet, add onions and bell pepper. Sauté for about 3-4 minutes until softened, then add the minced garlic and sauté for another minute.

      Combine Ingredients: Transfer the sautéed vegetables to the slow cooker with the browned meat. Add the diced tomatoes, kidney beans, black beans, tomato paste, and beef or vegetable broth.

        Spice it Up: Stir in the chili powder, cumin, smoked paprika, minced chipotle peppers, oregano, and season with salt and pepper.

          Slow Cook: Set the slow cooker on low for 6-8 hours or high for 3-4 hours. If possible, stir once or twice during cooking to ensure even blending of flavors.

            Final Adjustments: Taste the chili 30 minutes before serving and adjust seasoning or add more chipotle for extra heat if desired.
