Ingredients
  

1 pound ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 can (10.5 oz) cream of mushroom soup

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup sharp cheddar cheese, shredded

4 medium-sized potatoes, peeled and sliced thinly

Fresh cilantro, chopped for garnish (optional)

Instructions
 

Brown the Meat: In a skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spoon as it cooks. Drain the excess fat.

    Sauté Vegetables: Add diced onions and garlic to the skillet with the meat. Sauté until the onions are translucent, about 3-4 minutes.

      Combine Ingredients: In the slow cooker, combine the browned meat mixture, black beans, corn, diced tomatoes, cream of mushroom soup, chili powder, cumin, smoked paprika, salt, and pepper. Stir until well mixed.

        Layer the Potatoes: Layer the sliced potatoes evenly over the meat and vegetable mixture in the slow cooker.

          Add Cheese: Sprinkle the shredded cheddar cheese on top of the potato layer.

            Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and fully cooked.

              Serve: Once ready, gently stir to combine the layers. Serve hot, garnished with fresh cilantro if desired.
