Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

2 cups frozen diced potatoes

1 cup shredded cheddar cheese

1 cup beef broth

Salt and pepper to taste

Optional toppings: sour cream, jalapeños, green onions, or avocado

Instructions
 

In a skillet over medium heat, brown the ground beef with the diced onion and minced garlic until the beef is fully cooked, about 5-7 minutes. Drain excess fat.

    In the slow cooker, combine the browned beef mixture with black beans, corn, diced tomatoes (with juices), taco seasoning, frozen potatoes, and beef broth. Stir well to combine.

      Season with salt and pepper to taste.

        Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.

          Once cooked, sprinkle the shredded cheddar cheese on top and cover for an additional 10-15 minutes until the cheese melts.

            Serve hot, garnished with your choice of toppings like sour cream, sliced jalapeños, chopped green onions, or avocado.
