Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup frozen mixed vegetables (peas, carrots, and corn)

1 cup shredded cheddar cheese

1 tbsp chili powder

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

1 bag (1 lb) frozen tater tots

Fresh cilantro for garnish (optional)

Instructions
 

Brown the Beef: In a frying pan over medium heat, cook the ground beef until browned. Drain excess fat, then add the diced onion and minced garlic, cooking until the onion is translucent (about 5 minutes).

    Combine Ingredients: In the slow cooker, combine the browned beef mixture, black beans, corn, diced tomatoes with green chilies, frozen mixed vegetables, chili powder, cumin, paprika, salt, and pepper. Stir well to mix all the ingredients.

      Layer the Dish: Spread the frozen tater tots evenly over the top of the mixture in the slow cooker.

        Slow Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours. About 30 minutes before serving, sprinkle the shredded cheddar cheese on top of the casserole and cover again until melted.

          Serve: Once cooked, garnish with fresh cilantro if desired, then scoop into bowls and enjoy your cowboy casserole!
