1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup diced onion

1 cup diced bell peppers (any color)

2 cups frozen tater tots

1 cup shredded cheddar cheese

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Brown the Beef: In a skillet, over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks. Drain any excess fat if necessary.

    Prepare the Vegetables: In the same skillet, add the diced onion and bell peppers to the browned beef. Cook until onions are translucent, about 3-4 minutes, then stir in the taco seasoning. Combine to ensure even seasoning.

      Layer in the Slow Cooker: In the slow cooker, layer the cooked beef and vegetable mixture. Add the black beans, corn, and diced tomatoes on top. Stir gently to combine all the ingredients.

        Add Tater Tots: Evenly place the frozen tater tots on top of the mixture in the slow cooker, ensuring they cover the entire surface.

          Cook: Cover the slow cooker and set it to low heat for 4-6 hours, or on high for 2-3 hours, until the tater tots are cooked through and golden brown.

            Add Cheese: About 15 minutes before serving, sprinkle the shredded cheddar cheese on top of the casserole. Cover and allow the cheese to melt.
