Ingredients

2 cans (28 oz each) of crushed tomatoes

1 medium onion, chopped

3 cloves garlic, minced

3 cups vegetable broth

1 cup heavy cream or coconut cream for a dairy-free option

1 teaspoon sugar (optional, to balance acidity)

1 tablespoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil for sautéing

Instructions

Sauté Aromatics: In a skillet over medium heat, drizzle a little olive oil and sauté the chopped onion until translucent (about 5 minutes). Add the minced garlic and continue to sauté for another minute until fragrant. Transfer this mixture to the slow cooker.

Combine Ingredients: In the slow cooker, add the crushed tomatoes, vegetable broth, dried basil, oregano, sugar (if using), salt, and pepper. Stir to combine all ingredients well.

Cook: Cover and cook on low for about 6-8 hours or on high for 3-4 hours. The longer it cooks, the more the flavors will meld together.

Blend: After cooking, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, you can blend only half of the soup or use a potato masher instead.

Cream It Up: Stir in the heavy cream (or coconut cream) and mix well, allowing the soup to heat through for another 15-30 minutes on low.

Taste and Adjust: Taste the soup and adjust any seasonings if necessary, adding more salt, pepper, or basil as needed.

Serve: Ladle the creamy tomato basil soup into bowls and garnish with fresh basil leaves. Pair with a grilled cheese sandwich or crusty bread for a comforting meal.

                Prep Time: 15 minutes | Total Time: 6-8 hours | Servings: 6-8
