2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (28 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

1 bell pepper (any color), diced

1 small onion, diced

2 cloves garlic, minced

1 cup chicken broth

1 cup shredded cheddar cheese

1 avocado, diced (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salt and pepper to taste

Instructions
 

Prep the Chicken: Place the boneless chicken breasts at the bottom of the slow cooker. Sprinkle with salt, pepper, and taco seasoning.

    Layer the Ingredients: Add the diced bell pepper, diced onion, minced garlic, black beans, corn, and diced tomatoes (with their juice) on top of the chicken.

      Add Liquid: Pour the chicken broth over the ingredients to ensure everything cooks evenly and stays moist.

        Cook: Cover the slow cooker with its lid and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.

          Shred the Chicken: Once cooking time is complete, carefully remove the chicken breasts from the slow cooker and shred with two forks. Return the shredded chicken to the pot and stir to combine.

            Add Cheese: Sprinkle shredded cheddar cheese on top of the mixture, cover for an additional 15 minutes on low until melted.
