Ingredients

4 medium russet potatoes, scrubbed and patted dry

4 tablespoons olive oil

1 teaspoon sea salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried rosemary (optional)

½ cup shredded cheese (cheddar or your choice)

¼ cup sour cream (optional, for serving)

Chopped chives or green onions (for garnish)

Instructions

Prepare the Potatoes: Cut a small slit in each potato to allow steam to escape during cooking. This helps to prevent bursting.

Season the Potatoes: In a bowl, mix the olive oil, sea salt, black pepper, garlic powder, onion powder, and dried rosemary (if using). Rub this mixture onto each potato, making sure they are well-coated.

Wrap in Foil: Individually wrap each potato tightly in aluminum foil. This not only keeps them moist but also helps to cook them evenly in the slow cooker.

Slow Cook: Place the wrapped potatoes in the slow cooker. You can stack them if needed. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender when pierced with a fork.

Unwrap and Serve: Carefully unwrap each potato (beware of steam), then place them on a serving plate. Top with shredded cheese and let it melt slightly. Serve with sour cream, chives, or green onions if desired.
