2 to 3 pounds beef chuck roast

1 tablespoon olive oil

1 large onion, sliced

4 cloves garlic, minced

1 cup beef broth

1 cup French onion soup

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

6 to 8 hoagie rolls

Sliced provolone or mozzarella cheese (optional)

Fresh parsley, chopped (for garnish)

Sear the Roast: In a skillet over medium-high heat, add the olive oil. Season the chuck roast with salt and pepper. Once the oil is hot, sear the roast on all sides until browned (about 3-4 minutes per side). This step adds depth of flavor.

    Prepare the Slow Cooker: Place the sliced onion and minced garlic at the bottom of the slow cooker. Lay the seared roast on top of the onions and garlic.

      Add the Liquid: In a bowl, whisk together the beef broth, French onion soup, Worcestershire sauce, thyme, and rosemary. Pour this mixture over the roast in the slow cooker.

        Cook: Cover the slow cooker and cook on low for 8-10 hours, or on high for 4-6 hours, until the meat is very tender and easily shreds with a fork.

          Shred the Meat: Once cooked, remove the roast from the slow cooker and let it rest for a few minutes. Then, shred the beef using two forks.

            Prepare the Sandwiches: If desired, slice the hoagie rolls lengthwise without cutting entirely through. Place a portion of shredded beef into each roll. If using cheese, add slices on top and optionally melt them under the broiler for 1-2 minutes.

              Serve: Strain the broth from the slow cooker using a fine-mesh sieve (to remove onion and garlic bits). Serve each sandwich with a small bowl of the broth for dipping. Garnish with fresh parsley if desired.
