Ingredients
  

3-4 pounds beef chuck roast

1 large onion, sliced

4 cloves garlic, minced

2 cups beef broth

1 cup dark beer (or additional beef broth)

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

6-8 hoagie rolls

2 cups provolone cheese, shredded

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Beef: Season the beef chuck roast generously with salt and pepper. Heat a large skillet over medium-high heat and sear the roast on all sides until browned. This step adds a depth of flavor to the meat.

    Layer the Aromatics: In the slow cooker, add the sliced onions and minced garlic, spreading them across the bottom.

      Add the Roast: Place the seared roast on top of the onions and garlic in the slow cooker.

        Create the Broth Mixture: In a separate bowl, mix together the beef broth, dark beer, Worcestershire sauce, thyme, and rosemary. Pour this mixture over the roast and aromatics in the slow cooker.

          Slow Cook: Cover the slow cooker with its lid and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and pulls apart easily with a fork.

            Shred the Beef: Once cooked, remove the roast and let it rest for a few minutes. Shred the beef with two forks, discarding any large pieces of fat.

              Toast the Rolls: While the beef is resting, preheat your oven to 350°F (175°C). Slice the hoagie rolls and place them on a baking sheet. Toast them in the oven for about 5-7 minutes or until they are crispy.

                Build the Sandwiches: Layer the shredded beef onto the toasted rolls and top with a generous amount of provolone cheese. If desired, return the sandwiches to the oven for an additional 5 minutes to melt the cheese.

                  Serve with Juices: Strain the liquid from the slow cooker into individual serving bowls for dipping. Serve the sandwiches hot, garnished with fresh parsley and accompanied by the flavorful dipping broth.
