Slow Cooker Garlic Butter Beef Bites & Potatoes

Ingredients
  

2 lbs beef chuck roast, cut into 1-inch cubes

1.5 lbs baby potatoes, halved

1/2 cup unsalted butter (1 stick)

6 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup beef broth

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Beef: Season the beef cubes generously with salt and pepper. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Sear the beef cubes in batches until browned on all sides. Transfer the browned beef to the slow cooker.

    Prepare the Potatoes: In the same skillet, add the halved baby potatoes and sauté for about 5 minutes until they just start to soften and brown slightly. Transfer them to the slow cooker with the beef.

      Make Garlic Butter Mixture: In the skillet, reduce the heat to medium and add the remaining 6 tablespoons of butter. Once melted, add the minced garlic, rosemary, thyme, onion powder, and smoked paprika. Sauté for about 2 minutes until fragrant.

        Combine Ingredients: Pour the garlic butter mixture over the beef and potatoes in the slow cooker. Add the beef broth and Worcestershire sauce. Give everything a good stir to combine.

          Slow Cook: Cover the slow cooker and set it on low for 6-8 hours, or on high for 4-5 hours, until the beef is tender and the potatoes are cooked through.

            Serve: Once cooked, stir everything gently. Taste and adjust seasoning with more salt and pepper if needed. Garnish with fresh chopped parsley before serving.
