Ingredients

1.5 lbs beef sirloin, cut into 1-inch cubes

1 lb baby potatoes, halved

1 stick (1/2 cup) unsalted butter

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)

1 cup beef broth

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Ingredients: Start by cutting the beef sirloin into 1-inch cubes, halve the baby potatoes and mince the garlic. Set these aside.

Sear the Beef (Optional): For extra flavor, heat a skillet over medium-high heat. Add a tablespoon of butter and sear the beef cubes until browned on all sides. This step is optional but recommended for deeper flavor.

Prepare the Slow Cooker: In the slow cooker, add the halved baby potatoes. Sprinkle a little salt and pepper over them.

Make the Garlic Butter Sauce: In a small saucepan, melt the remaining butter over medium heat. Add the minced garlic, rosemary, thyme, soy sauce, Worcestershire sauce, and broth. Stir well and let simmer for about 3 minutes until fragrant.

Combine in Slow Cooker: Pour the garlic butter mixture over the potatoes in the slow cooker. Add the seared (or raw) beef cubes on top. Season with additional salt and pepper if desired.

Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender and the potatoes are cooked through.

Serve: Once cooked, give everything a gentle stir. Adjust seasoning if needed. Serve hot, garnished with freshly chopped parsley for a touch of color and flavor.
